Make Shimmer Shots*  Bring two cups of peach juice to a gentle boil. In a bowl, mix: One cup of cold pineapple juice, ½ cup of whipped cream flavored vodka. Shake four packets of pure gelatin onto the surface of the liquids. Let stand and thicken for about four minutes. Add boiling peach juice to bowl and stir until it’s all dissolved. Spray the pan with baking-cooking spray to help the gelatin release after refrigeration. Pour mixture into rectangular pan and refrigerate overnight.

*See video above for demonstration.

Cut Into Strips  Trim all sides of the gelatin to create nice straight edges. Next, cut the block into strips approximately 1.5” wide.

Step 4

Individualize  Cut strips into individual shots. Each shot should be about 2 ½” long to create rectangles small enough for guests to pop into their mouths without feeling clumsy. Or – use holiday cookie cutters to create any shape!

I actually tried these, and they worked (even with my limited skills). Sooooo good! Thanks, it's going to be a new tradition. (Also great for Valentine's Day, 4th of July, etc.).

People can drink when they're 18 years old in my region (and a bit younger at home with adult supervision), so even more guests will enjoy these jelly squares! Thanks for the idea.

What did you use to make the Green ones??

    • Laurie_March says:

Judy – I used neon food coloring. It was a few drops of regular green and a few drops of neon yellow! We were trying to match the chartreuse green we did in Kendra Wilkinson's home for Celebrity Holiday Home, and make striking shots at the same time. :)
