Quick Summer Appetizers for Your 4th of July Picnic

‘Tis the season of gardening and last minute picnics! (Fa-la-la-la-la) So here are 2 super-quick summer appetizers to bring to your Fourth of July festivities or, in our case, pack for a trip to the river this weekend. The best part? I found most of these ingredients right outside my back door!

You’ll need:

  • watermelon, cubed
  • tiny tomatoes
  • a cucumber
  • a block of feta cheese
  • basil and/or mint
  • kabob skewers
  • olive oil

The first thing I did was cut off the ends of the cucumber. Then, I ran the tines of a fork  down the length of it. This will take off some of the skin to make a cute pattern around the edges. (Read: This step is completely superfluous and unnecessary.)

Next, mix and match your fruits, veggie, and cheese on the skewers. Pro-tip: Put the feta between things and never on the ends. It has a tendency to crumble and needs something to hold it in place.

The last step is to drizzle a little olive oil and then top with one of the herbs. Here are the combos I used:

Skewer 1:

  • tomato
  • cucumber
  • feta
  • basil

Skewer 2:

  • watermelon
  • cucumber
  • feta
  • mint
